Calvin Seerveld’s Rainbows for a Fallen World or Bearing Fresh Olive Leaves (the best and most recent).
Art and Soul by Hilary Brand & Adrienne Chaplin (also recent and very good).
Modern Art and the Death of a Culture by Rookmaker (written in the late 1960’s).

Rainbows… is great.
If you can find Art in Action by Nicholas Wolterstorff, it’s very good though not the easiest read.
Walking on Water by Madeleine L’Engle is interesting.
